French toast with raspberries and vanilla

Ingredients

  • 1 Brioche or milk pan
  • 4 Free range eggs
  • 250 ml Milk
  • 250 ml Heavy cream
  • pinch Nutmeg
  • pinch Cinnamon
  • 200 g Sugar
  • 3 oz Bourbon
  • For the Raspberry & Vanilla Compote
  • 200 g Raspberries
  • 100 g Sugar
  • 100 ml Water
  • 1 Vanilla Pod

Everyone’s favourite and a perfect way to use up day-old bread.

  1. For the French toast mix all the ingredients together, slice the bread and dip into the mixture, pan fry in a non-stick pan using a little butter. Cook on both sides for a couple of minutes until golden brown.
  2. To make the compote place all ingredients into a saucepan and bring to a boil, reduce heat and cook for a couple of minutes and taste for sweetness - add a little more sugar if necessary.
  3. Dust with a little icing sugar before serving as is or with a dollop of natural yoghurt.
