Grilled mackerel, pickled beetroot, sesame & yogurt

Ingredients

  • 6 fillets Mackerel
  • 2 tbsp Soya sauce
  • 500 g Beetroot cooked
  • 100 g Honey
  • 150 ml Cider vinegar
  • 6 Peppercorns
  • 125 ml Water
  • 1 Bay Leaf
  • 1 Shallot
  • 100 ml Yogurt
  • 1 tbsp Sesame Seeds
  • 5 g Mint

This dish is delicious served cold so cook some extra!

  1. Bring the honey, water, vinegar, peppercorns and bay leaf to a boil. Leave to cool.
  2. Peel and slice the beetroot and add to the pickling liquid and chill overnight.
  3. Brush the mackerel fillets with the soya sauce and leave for 20 minutes. Place on a tray under a hot grill until cooked and slightly charred.
  4. Place beetroot on a plate and sprinkle with the sesame, tear the mint and add. Slice the shallot and add. Finally, top with the mackerel.
  5. Spoon some natural yoghurt and serve.
