Roasted butternut squash with sprouting broccoli, toasted seeds and lime dressing

Ingredients

Butternut squash
2 Bunch
Sprouting Brocolli
1 Tbsp
Pumpkin seeds
1 Tbsp
Sunflower seeds
1 Tbsp
Sesame Seeds

Limes
1 Bunch
Coriander
50 Ml
Olive Oil
1 Packet
Alfalfa Sprouts
Peel and dice the squash into chunks, toss in some olive oil and season. Roast in a preheated oven 200c until tender approx. 20 minutes
Wash the broccoli and cut into small florets
Toast the seed on a dry pan or in the oven for a couple of minutes.
For the dressing juice the limes and add the coriander and olive oil. Blitz in a blender until emulsified and season to taste.
Toss all the ingredients in a large bowl and season to taste.
