Roasted butternut squash with sprouting broccoli, toasted seeds and lime dressing

Ingredients

  • 1 Butternut squash
  • 2 Bunch Sprouting Brocolli
  • 1 Tbsp Pumpkin seeds
  • 1 Tbsp Sunflower seeds
  • 1 Tbsp Sesame Seeds
  • 2 Limes
  • 1 Bunch Coriander
  • 50 Ml Olive Oil
  • 1 Packet Alfalfa Sprouts

  1. Peel and dice the squash into chunks, toss in some olive oil and season. Roast in a preheated oven 200c until tender approx. 20 minutes
  2. Wash the broccoli and cut into small florets
  3. Toast the seed on a dry pan or in the oven for a couple of minutes.
  4. For the dressing juice the limes and add the coriander and olive oil. Blitz in a blender until emulsified and season to taste.
  5. Toss all the ingredients in a large bowl and season to taste.
